Vegan chocolate mousse

I am not vegan, I will probably never be, but i am strongly convinced that you can make amazing stuffs for vegan people, or simply for people who have a lot of allergies. That's why i buy planty of books and try a lot of recipes, most of them i leave as they are, some i change either because they do't wor, or if i am not happy about the result and i think i can do better. Anyway once the recipe will be online you can be sure that i made it more then once and it is working! But if you struggle with it you can always contact me and asw for help, I will answer as soon as possible.
I took this recipe form a vegan dessert book, named Modern vegan dessert.
For this vegan chocolate mousse you will only need 4 ingredients:
 
  • 350 gr silken tofu
  • 80 gr dark chocolate 80%
  • 8 gr cocoa powder
  • 60 g agave syrup
  • cacao nibs (or nuts)
  • vanilla extract
Procedure:

Start to melt slowly the chocolate in the microwave, then mix it with the silken tofu firm, add the cocoa powder, the agave syrup and blitz it with a bamix.
Try your mixture, i my opinion I could feel a taste i am not used to feel in dessert, which is the tofu, that's why I add vanilla extract, which covered the taste of tofu and gave to it the beautiful smell and taste of this spice.
Pour it in 4 jars, and let it set for at least 3 hours.
Before serving the chocolate mousse you can sprinkle on top of it some cocoa nibs or some chopped nuts.
In this way this dessert will be not only good for people who can't have dairy and eggs, but even gluten free and diabetic.
As a matter of fact, the agave syrup has a very low glicemic index, that's why it does'r contribute to the rising of sugar levels in blood, therefore it is accepted in diet'sof people who soffer of this disease.
