Who doesn’t love chocolate cookies? They are easy to make and awesomely good. There are thousands of different variation of this classic recipe, but my favourite one is the one we are currently making for the clients of the hotel where I work. They are so good, that very often clients buy them as a take away food for they travel back home. Who can blame them? I am sure you will understand once you try out the recipe.
Ingredients:
- 130g dark chocolate 60-69%
- 142g plain flour
- 1 pinch of salt
- 1g soda bicarbonate
- 47g butter
- 64g sugar
- 64g cane sugar
- 12g peanut butter
- 1 egg
Mix the butter with the two sugar types until the butter becomes soft, then add the egg slowly while continuing to mix gently.
I usually do this step in the stand mixer, but if you don’t one you can use the hand mixer instead.
The next step is to add vanilla, flour and salt while rapidly mixing the dough. Finally, add the chocolate drops and give the mix another stir to distribute them evenly in the dough.
Now is the time to shape your cookies and to choose your style to do so:
Option 1 is to spread the mix on a wooden board until it has a thickness of roughly half centimetre. At this point you can use a cutter to shape your cookies and iterate the spread and cut process until you use all the dough;
Option 2 is a bit messy and require a bit more time, as you will have to take a portion of the dough, shape it like a ball with your hand to then put it on the baking tray and press it a little bit so that it becomes flat;
Finally, the cowboy way, that is to use scoop you dough directly on the baking tray.
I normally use option 1, as it is the only one that guarantees cookies one identical to the other.
Preheat the oven at 180°C and once your baking trays are full of cookies are ready, bake for 8 minutes. Our aim is to have them golden brown on the outside, but still soft in the inside.
